Smoked Watermelon Margarita
Place all the ingredients in a blender and blend the mixture at high speed until it becomes a slushie texture (hence the cocktail’s name!). Next, sprinkle some chili powder on a small plate, and using four rocks glasses, rim the edge of each glass with a lime wedge and then gently dip each glass upside down into the chili powder until you have lightly coated the rim. Pour the Oaxacan Slushie out of the blender to fill each of the four glasses equally (or your friends might get angry ). At this point, if you want a little more pop to your cocktail, you might choose to add an extra ½ ounce of Chulele Joven Mezcal right on top (this could make your friends happy again if they felt that you poured unequally in the previous step!). Garnish with mint and pomegranate seeds. Enjoy!


THE OAXACAN SLUSHIE
Create simple syrup by adding sugar, water, and orange zest in a small saucepan and bring to a boil, stirring constantly. Simmer until the sugar is completely dissolved. Immediately remove the simple syrup from the heat and allow it to cool completely. Remove orange zest strips from the cooled simple syrup.
Place watermelon in a blender or food processor. Pulse until pureed.
Stir watermelon puree into a large pitcher with simple syrup, Chulele mezcal, and lime juice. Place a small amount of salt or sugar into a saucer. Rub the edge of margarita glasses with a lime wedge to moisten. Lightly dip the rim of the glass into the saucer to rim the glass; tap off excess salt or sugar.
Fill four rimmed glasses with crushed ice; pour margarita mixture into glasses and garnish with lime wedges.
Mezcal Apple Cider
Pour Chulele Joven mezcal, lime juice, agave nectar, apple cider, and a few pinches of sea salt into a cocktail shaker and stir. Pinch off a piece of a rosemary sprig, drop it into the cocktail shaker, and crush the sprig against the bottom of the shaker to release its flavor using a muddler. Next, add ice, cap cocktail shaker, and shake. Pour through a strainer into four low-ball glasses filled with ice. Garnish with rosemary sprigs and apple slices. MAKES FOUR SERVINGS.


MEZCAL PALOMA
The traditional Paloma cocktail recipe developed by legendary bartender Don Javier Delgado Corona used tequila. However, by substituting Chulele Joven Mezcal for tequila, the cocktail takes on a beautiful smokey note that adds complexity.
If you wish to pay tribute to Don Javier Delgado Corona, you can mix the ingredients using a knife.
